Cellina Barese, la tipica cultivar a duplice attitudine della Puglia
La Cellina Barese è una varietà a duplice attitudine, per la produzione di olio e olive da mensa, presente sporadicamente in provincia di Bari principalmente nella fascia premurgiana e nelle Murge al confine con la Basilicata ove è pure presente e nota col nome di Augellina.

Le origini della cultivar Cellina Barese non sono certe. Un riferimento ad una varietà di olivo, hocellina è riportato nel Codice diplomatico pugliese del a. 1095. Una sommaria descrizione fatta in Puglia, di cui si ha documentazione, è quella di Pantanelli-Brandonisio degli anni 30 del 1900.
Augellina, Cellina delle Murge, Cellina di Cassano.
L’albero: presenta una vigoria elevata, un portamento espanso e una densità della chioma fitta.
L’infiorescenza: presenta una lunghezza elevata, un numero di fiori alto e una struttura compatta.
La foglia: presenta una forma ellittico-lanceolata con una lunghezza media ed una larghezza media; la curvatura longitudinale della lamina piana e il colore della pagina superiore verde intenso.
Il frutto: presenta un peso molto medio caratterizzato da un rapporto polpa/nocciolo medio; ha una forma ellissoidale leggermente asimmetrica, con una posizione centrale del diametro medio trasversale massimo. L’apice è appuntito e la base troncata Il mucrone è assente. Sono presenti abbondanti lenticelle di grandi dimensioni. L’invaiatura inizia dall’apice e la colorazione a piena maturazione è nero-violacea.
L’Epoca di fioritura della cultivar Cellina barese è precoce-intermedia; mentre l’epoca di invaiatura è media scalare.
La cultivar Cellina barese è autosterile ed è coltivata in oliveti nei quali si trovano alberi delle cultivar Coratina, Ogliarola barese, Mele, la cui fioritura è praticamente contemporanea.
Il contenuto in olio della cultivar Cellina barese è medio. La cultivar presenta un contenuto di fenoli che mediamente supera i 200 mg/kg.
Il contenuto di acido oleico è superiore al 70% (la concentrazione minima di acido oleico per il claim salutistico approvato dall’EFSA è 70%).
La Cellina Barese, sia nella forma di olive da mensa che trasformata in olio, è particolarmente adatta all’uso in cucina essendo ideale per insaporire carne, pesce e verdure. Eccellente anche nelle insalate e nei sughi. Per le buone caratteristiche merceologiche, parte del prodotto (quella a pezzatura più alta) può essere utilizzata come olive da mensa verdi. Se impiegata per la produzione di olio, il prodotto è caratterizzato da un fruttato medio di oliva verde con gradevoli note di erba fresca e foglia di olivo. Al gusto si avverte la foglia di olivo, il carciofo, l’erba e la mandorla, la mela, il pomodoro e l’erba. Amaro e piccante mediamente presenti e percepiti e persistenti.
