LAMPASCIONI IN PURGATORIO

Ingredients for 6 people: 

  • 500 g Lampascioni (small onions)
  • 100 g “Bambina” extra virgin olive oil from Gravina in Puglia
  • 150 g Cherry tomatoes
  • 50 g Onions
  • 50 g 50 stale bread
  • 100 g Sausage

METHOD

Place the peeled small onions incised with a cross on the backr part into a medium sized saucepan. Add the “Bambina” extra virgin olive oil from Gravina in Puglia, the cherry tomatoes cut in half, the onions cut into quarters and the sausage cut into chunks.

N.B. A paste made from the stale bread will serve to cover the saucepan during cooking.

HISTORICAL OUTLINES

This is described as a typical peasant dish. The lampascioni are harvested during ploughing which is done with a mule-drawn plough. The lampascioni are cooked with all the other ingredients resulting in a dish which is unusual for its aroma and flavour.
