Cultivar for the production of oil and table olives, significantly present in the municipality of Bitetto, in the province of Bari.
Termite di Bitetto, dual purpose cultivar typical of the Apulia region
The Termite di Bitetto cultivar has a modest cultural importance and no relevant historical notes are available.
‘Cima di Bitetti’, ‘Mele di Bitetto’, ‘Oliva mele’
The tree: it has medium vigour, an expansive habit and a medium-thick crown density.
The inflorescence: it has a medium length, with a low number of flowers per little finger and a compact structure.
The leaf: it has an elliptical shape, an average length and a large width; the longitudinal curvature of the lamina is flat-hyponastic and the color of the upper surface is light green.
The fruit: it has a high weight, an ovoid shape with a central maximum transversal average diameter position. The apex is rounded and the base truncated, the lenticels are abundant and small. The umbo is absent.
The vegetative restart and the mignolatura are intermediate, the flowering period is precocious and of medium duration (15 days)a. The ripening period of the drupes is precocious and concentrated.
The tree is characterized by medium vigor, early flowering and high summer drop. The high weight of the drupes, the high pulp/stone ratio, the early and concentrated veraison, make this cultivar suitable for the production of black table olives, even if the pulp remains soft. The cultivar is partially self-sterile and flowers at the same time as the cv Coratina, Ogliarola barese and Mele.
The cultivar has a fatty acid composition characterized by a low oleic acid content, around 65%, and a high palmitic acid content, on average equal to 17%. Low content in total phenols, 85 ppm of ac. Caffeic, reduced shelf life.
The cultivar has a medium intensity ripe olive fruitiness, and appears sweet to the taste. The taste does not highlight any notes of value.
Cultivar significantly present in the municipality of Bitetto and reduced in neighboring municipalities.
