Fava beans with croutons

Ingredients for 4 people:

  • 120 gr of dried fava beans with shells
  • 60 gr of stale bread
  • To taste Coratina extra virgin olive oil
  • 1 Acquaviva red onion
  • Salt to taste
  • One tablespoon of pork lard


Place the fava beans to steep the night before with a tablespoon of bicarbonate of soda to soften the shells. Place the fava beans into a clay pot, fill with water, add the salt and leave to cook over slow heat for about 3-4 hours, constantly topping up with hot water as it evaporates.

Meanwhile, slice the onion and soften in plenty of extra virgin olive oil and add the pork lard. Take the stale bread and toast in the oven at 180° for about 5 minutes.

When all the ingredients are ready, transfer them to a single saucepan, mix together for about 2-3 minutes and serve in a flat-bottomed dish adding a splash of extra virgin olive oil.
